Crimini mushrooms, which are botanically the same as portabella mushrooms, are picked while they are still closed, with their veil covering the gill surface. Their flavor, which intensifies when cooked, is earthier and more intense than white button mushrooms though they can usually be substituted for any recipe calling for white mushrooms when a more full-bodied taste is preferred.
Uses:
Crimini mushrooms are extremely versatile and work equally well as an appetizer, side dish, or entrée. Serve sliced, baked, sautéed (pastas and stir-fries), or grilled (quesadillas and burgers).
